Let me just say I am absolutely obsessed with finding and/or making the best burger. I used to run a lot of races and believe it or not, burgers were my pre-race meal (night before). While others eat pasta and carb load, I always ate a burger. Although I haven’t been able to run in over a year, I still eat a burger at least once a week and am always trying to find the best combinations. This week I have been dreaming of running again and that set my mind up to make an awesome burger tonight.
Today I wanted to try my hand at a burger topped with bacon marmalade, pimento cheese and jalapeños. Hubby of course grilled the burgers and I made the bacon marmalade. One of my favorite appetizers is bacon marmalade, pimento cheese, fresh bread and a couple of drops of hot sauce…so had to try it on a burger.
1 lb sugar cured bacon
1 red onion
1/4 cup brown sugar
Kosher salt
1 tbsp balsamic vinegar
For my recipe I cut 1 lb of sugar cured bacon from M&T Meats (my favorite butcher around) into about 3/4 inch pieces. I cooked the bacon until it was crispy and drained on a paper towel.
